The Severac Illustre is made and aged for 3 to 6 months in a Cantal’s cellar – in St Bonnet de Salers, more precisely. This optimal maturing period is the source of the Severac’s outstanding reputation.
Under a golden and mould rind, its yellow paste is well binded, firm, supple and even. It reveals a fruity smell filled with mountainous aromas. A unique and authentic taste that reflects our fully bodied terroir.
The Severac "Patriarche"
The Severac Patriarche is made and aged for 6 to 12 months in a Cantal’s cellar – in St Bonnet de Salers, more precisely. This extended maturing period is ideal for the lovers of strong character cheese. Its thick and dark rind, its slightly friable yellow ochre paste makes way for a mature, rustic and long finish taste with spicy, even peppery, notes.
